Grapefruit Mojito Ceviche

2-3 grapefruits, peeled and sectioned
handful of fresh mint, chopped
zest of half a lime, or about 1 teaspoon
1-2 tsp. natural raw sugar
agave nectar, honey, or simple syrup

Not too much to explain. After peeling the grapefruit, I also removed the individual section casings, tossed with chopped mint, lime zest, and raw sugar, and then drizzled another teaspoon of agave nectar over it.

We're definitely going to try this combo again with rum for a summer cocktail or boozy fruit salad.
