Sweet and Spicy Mixed Nuts

(or, "Hot Nuts!")

3 Tbsp. peanut or vegetable oil
2 cups almonds, walnuts, pecans
1/2 cup sugar (I used white and brown)
1.5 tsp. ground cumin
1.5 tsp. salt
1 tsp. hot pepper flakes
1 tsp. cinnamon
1 Tbsp. sugar

Heat the oil in a heavy skillet or frying pan over medium high heat. Add nuts and sprinkle a half cup of the sugar over them. Saute until almonds are golden brown and the sugar caramelizes. Remove the nuts from the pan and toss in a large bowl with the salt, cumin, cinnamon, pepper flakes, and remaining sugar. Serve warm or at room temperature, and store in an airtight container.

On the spicy nuts recipe, I would only add that premixing the last five ingredients and having them ready in a small bowl to dump/sprinkle quickly over the hot nuts that just came out of the frying pan makes life alot easier! And watch out, these are addictive (and an old Martha Stewart recipe from one of her earliest cookbooks!!)
